Back when I was just a little tyke, a peanut butter sandwich was my lunch of choice (open faced, no jelly). But honestly, at 27 years of age, I’m just tired of 'em. It’s also not a sandwich that really fits with my new, adult diet, which mainly consists of throwing as many vegetables into my face as I can handle. That’s where this sandwich comes in.
Rich, smooth peanut butter with a sweet and savory umami kick and crunchy vegetables, this is a vegetarian sandwich even a carnivore will love. Sometimes a veggie sandwich kind of feels like it's missing something, you know? Too many times, I've been left unsatisfied from veggie sandwiches, leading to binge eating whatever I can find in my cupboards until I'm uncomfortably full, but oddly still hungry. The savory flavors, solid protein content, and addicting crunch strike a perfect balance that'll fill you up without weighing you down. Your boring peanut butter sandwich just got a little bit healthier, and a whole lot more exciting.

Directions
Combine all satay sauce ingredients in a small bowl and stir to combine.
Spread sauce on all sides of bread, then layer with cucmber, onion, and bell pepper. Top with cabbage, and cilantro leaves.
